Create new delicacies with cuisines and techniques from around the world.
 
In this class we will be preparing a delicious vegetarian Italian meal, including a delightful salad of butter lettuces with fennel, white beans, and oranges with shaved Parmigiano-Reggiano, and homemade potato gnocchi with crispy sage and brown butter.  We'll top off the meal with Chocolate Hazelnut Biscotti for dessert.  You will learn how to cut citrus fruits into sections with no pesky membranes, cook flavorful white beans, make very light and perfect gnocchi, create a nutty and amazingly flavorful brown butter sauce, and crunchy, chocolaty biscotti.  No airline ticket is necessary - just bring yourself and your appetite!  Buon apetito!!  A $40 materials fee is payable to instructor.

Caribbean cuisine is a combination of a variety of European food derivatives brought to the islands by slaves and explorers.  We'll explore traditional recipes from local folks and chefs.  Preparation and presentation of these intriguing dishes will be highlighted, along with discovering a variety of spices, sauces, fruits and vegetables native to West Indies cooking.  Please bring a sharp chef's knife to class.  A $30 materials fee is payable to instructor.

This fish taco class is a favorite of my students!  The tacos are full of flavor and color and are a delight to the senses.  We slather the fish with a delicious spiced olive oil and sear it so it stays tender, juicy and tasty, yet healthy and light.  It becomes the center of a wonderful family-style spread of accompaniments, such as flavorful black beans, spicy charred tomato salsa, crunchy southwestern salad topping, cooling chile lime sour cream sauce and fresh sliced avocado, all wrapped up in tender and warm white corn tortillas.  Join us for some south-of-the-border fun, and add a bit of spice to your next fiesta!  A $35 materials fee is payable to instructor.

Pâte sucrée is a French pastry that literally means "sugar dough".  This French crust serves as the base for fruit tarts, cream tarts, even ice cream tarts!  You will learn the skills to make this sweet and versatile tartlet dough.  In our version, we'll make sweet nut cookie tartlet dough and then use it to create an impressive (and easy) Chocolate Oblivian Tartlet.  We will also taste a few other versions of this versatile pastry such as coconut pâte sucree and ginger pâte sucree that you can make at home.  Each student will make their own Chocolate Oblivian tartlets and then take home extra dough to freeze for future creations.  Impress your friends and relatives at your next party with this heavenly chocolate dessert that looks as good as it tastes!  A $15 materials fee is payable to instructor at first class.
